Mobilization Excellence – FAO HQ Rome: A Race against Time

FAO Rome Mobilisation Completed in 21 Days: in September 2022, CIANO successfully mobilised catering operations at Food and Agriculture Organization Headquarters in Rome, following contract award on 12 September 2022.

Working within a 21-day mobilisation window, the team delivered full operational readiness in time to support a scheduled high-level international event on 3 October 2022, operating within a live UN institutional environment with no disruption to site activity.

The mobilisation required the parallel delivery of multiple workstreams:

• Workforce mobilisation: recruitment, onboarding, and deployment of approximately 30 staff within a controlled-access environment, aligned to site-specific procedures and compliance requirements.

• Supply chain activation: establishment of a reliable local supply network capable of supporting immediate service delivery, including fresh and ambient product flows aligned to volume and quality expectations.

• Operational setup: procurement, installation, and commissioning of equipment and service infrastructure across multiple outlets within the available timeframe.

• Food safety & compliance: implementation of HACCP systems and operational controls prior to service commencement, ensuring full compliance with institutional and regulatory standards.

Operations commenced on schedule with the opening of:

• 2 coffee bars
• Self-service cafeteria
• Main restaurant

The mobilisation was delivered on time and without operational disruption, enabling full service provision for the opening event.

Since launch, the FAO Rome operation has remained stable and continues to perform within expected operational parameters. The contract has progressed through its available extensions, reflecting consistent service delivery, compliance with food safety standards, and alignment with client requirements.

This project demonstrates CIANO’s ability to mobilise and operate multi-outlet catering services within compressed timelines, particularly in institutional environments where compliance, security, and operational discipline are critical.

FAO Rome remains a key reference site within CIANO’s UN portfolio, demonstrating our capability to deliver under time pressure while maintaining operational control and consistency.
